Ingredients:
1 cup English cucumber, diced
2 cups multi-colored cherry tomatoes, quartered
3/4 cup sharp cheddar, cubed
1 tsp dijon mustard
2-3 tbs apple cider vinegar
1/4 tsp coconut sugar
1 tsp EVOO
sea salt & pepper, to taste
Directions:
1. Chop everything & gently mix in a bowl. Be careful not to break the tomatoes. Cover with saran wrap and place in the refrigerator for an hour or so. Then serve cold.
