It’s bathing suit season and I’m trying to watch my carb-intake.
This is one of my favorite salads this summer. With all of the tomatoes from the garden, I’ve been eating this salad almost every day for lunch. So yummy!
Ingredients
6 tbs red wine vinegar
2-3tbs dijon mustard
1/8 tsp salt
1/8 tsp pepper
1/8 tsp sugar
Tomato
cucumber
red onion
basil
goat cheese (optional)
jalapeno (optional)
Directions
Mix the dressing and refrigerate for a few hours before using. If you're making this for more than one person you can double the dressing recipe so that it covers the desired about of salad. This dressing is somewhat tangy, so if you don't like that cut back on the vinegar. You can work this recipe to your taste. Pour over your salad and you’re ready for lunch.
