Ginger Chicken Cabbage Salad

I crave the Asian flavors, but I know that if I order out I will get something that has been deep fried or covered in a sauce that I just don’t need.  This salad cures my cravings but also tastes amazing and fairly healthy.  Try it and tell me what you think!Ginger Chicken Cabbage SaladFrom the Kitchen of Darby Hawley
Ingredients:
1/4 cup soy sauce
1 tbs ground ginger
3 tbs vegetable oil
2 tbs hoisin sauce
1 tbs toasted sesame oil
2 tsp chili oil
1/2 tsp sea salt
1/4 cup red wine vinegar
1/4 cup green onion, entire thing chopped
2 tsp white sesame seeds
1 lb chicken tenders, chopped into 1-inch pieces
1 head of napa cabbage, thinly sliced crosswise
3 cups carrots, shredded
2/3 cup sliced almonds, toasted
1/2 cup cilantro, chopped
3 more green onions, the entire thing chopped
dry roasted, unsalted, peanuts, chopped 

Directions:
1. In a measuring cup, whisk together soy sauce, ginger, vegetable oil, hoisin, sesame oil chili oil and sea salt.  Put 3 tbs of the marinade into a ziplock bag and add in chicken tenders.  Make sure the chicken is coated and then put it in the fridge for a couple hours.
2. With the remaining marinate, add in red wine vinegar, green onions, & sesame seeds.
3. Grill or saute chicken. While the chicken is grilling mix together the cabbage, carrots, almonds, cilantro, green onions, and peanuts.
4. Top your salad with the chicken and drizzle the marinade/dressing over top.
5. Enjoy!
