Oh well, who cares, it’s tasty hahahahahahaha
Here is my favorite super fast kale salad that I’ve been chowing on a lot lately. It’s so flavorful yet simple and tangy. It’s the perfect side salad or even a great substitute for coleslaw.
1 bunch kale
1 lemon, juiced
2 tbs Dijon mustard
2 tsp raw honey
1/4 cup EVOO
1 tsp sea salt, plus more to taste if you want
pepper, to taste
1 oz shaved parmigiano reggiano
1. Wash kale (I was lazy & didn’t do this one time. It only took me one time to learn because it was sooooo sandy; yuck!), break into bite sizes off the stem, and put into a bowl.
2. In a mason jar add lemon juice, mustard, honey, EVOO, salt & pepper. Put the top on the mason jar & shake to mix. Then drizzle over salad and toss to mix. Let the salad sit in the fridge covered for 15-30 minutes.
3. Garnish with shaved parmigiano reggiano.
