Fall is Here Granola
I make this granola year-round because it’s such a great snack. However, many family members request this for the holidays, so I happily make multiple batches and try to get it in the mail a couple weeks before Thanksgiving. I have mentioned this granola before, and since I can’t send you all some (as much as I’d like to), I thought I’d get you the recipe for the holidays.
In a bowl mix:
4 ½ cups oats
1 cup slivered almonds
1 cup ground walnuts
1 ¼ cup flour
1 tsp. cinnamon
Mix the following in a bowl, and then add to dry ingredients:
¾ cup vegetable oil
2/3 cup light maple syrup (or whatever kind of syrup you use for pancakes/waffles)
1/3 cup apple cider (this is difficult to find in seasons other than fall, but natural/organic apple juice is a great substitute)
Spread mixture on a rimmed cookie sheet covered with aluminum foil. Roast at 375 degrees for 25 minutes, watching carefully and flipping ingredients every 5 minutes. At the end of the 25 minutes, remove the cookie sheet from the oven and mix in 1-1 ½ cups dried cranberries (raisins also work well). At this point you can chose to sprinkle on brown sugar, no more than a ½ cup or it can get gritty. Put back in the oven for an additional 5 minutes. Stir, cool, and serve. Yummy!
Store in an airtight ziplock bag.
