Side Project

I know this month I’m supposed to be focusing on the hot mess that is our master bedroom.  But while I was out shopping, I saw some great fabric to make a blanket for snuggle time with my pup.  Who can resist snuggle time with a puppy?

This was a simple blanket that took me about 45 minutes to make, and I DON’T even have a sewing machine.  Totally do-able!  I purchased 1/2 yard of Steelers fleece, and a 1/2 yard of black minky dot fleece.  The total cost was $10.

I made this blanket like you would make a pillow case, and turned the fabric inside out.  I then sewed a simple stich, because I’m definitely not talented in this area, around the edge of 3 sides.

When I had completed 3 sides, I flipped the blanket right-side-out and finished the last side.  And that’s it!

Marital Monday: Housewifing on a Budget

Welcome to another week of Marital Monday. Today Jessica from Housewifing on a Budget is visiting and sharing her story of love and marriage. I just love Jessica and her genuine heart. Get this: she is also married to a man named Phil ;-) Jessica is an amazingly beautiful, honest, and funny woman; I just know you're gunna love her. Take it away Jessica!
hey all! i am jessica from housewifing on a budget where i blog about being a wife in the home to one of the greatest men i have ever known and obviously doing that on a pretty small budget. i love being a wife and i love decorating and diy projects, so you'll find that kind of stuff over there.

darby asked me to share something about marriage which is a pretty daunting task because there are so many things i could write about. marriage is probably the greatest adventure i've experienced in my life so far. phil and i were married july 25, 2008 and since then it has been quite the roller coaster ride. the first day of our marriage was a complete disaster haha. the day after the wedding we were dropped off at the airport around 4 pm to catch our flight to miami. we had booked a cruise that was leaving the next day so we had to be in miami for the night. well, our flight got delayed. then it was delayed some more. then of course, more delay. around 11:30 pm they were throwing around the word "cancellation". this was the point when i just started crying. i was standing there, newly married, in an airport thinking i may not make my honeymoon before it leaves without me, crying. it makes us laugh now but it was a horrible day. finally they got us on the plane and we landed in miami at 3 am. it was an exhausting and emotional day but the danger of missing our honeymoon was gone so we put it behind us and had a fabulous honeymoon : )

while our honeymoon was completely fabulous, it is so incredibly daunting to look ahead at an entire future before you, not knowing what lies ahead or what marriage will be like. we were kind of scared and didn't know what to expect. we knew that as soon as the honeymoon was over we were packing up all my stuff and moving to st. louis. i didn't have a job there yet, i had just graduated college, st louis was a long way away from my family and friends and i had only been there twice to visit phil. now i was just moving all my stuff there and moving in with him and it all just seemed so overwhelming! i had no idea how to be a wife and it just seemed like my life was full of unknowns which i was totally not a fan of.

whether i was a fan or not of the big unknown ahead of me, it was coming anyway. after the honeymoon we came back to my parents' house in georgia, packed up all my stuff and moved to st louis on the hottest day of the year in a car with no air conditioning. it was awful. not only this, but i realized i was sick with a fever and i started my "girl time" at this time. not good. this doesn't make for a good second week of marriage, let me tell you. plus i was moving 9 hours away from family to a city i wasn't sure i liked, to do a job i wasn't sure i knew how to do; being a wife. when we arrived at our new apartment that i had never seen in person i was less than thrilled. it was a mess. the landlords had promised to have it cleaned before we moved in. they did not follow through. i mean, there was still toothpaste in the sink. and hair. it was gross. being completely full of all kinds of emotions and being so incredibly tired, i just cried. there was so much to do and now i felt completely uncomfortable in our apartment since i was dirt. y.

this is another thing we look back on and laugh at now. those beginning times of marriage when everything seems so unknown and everything completely changes. it seem so scary. i was surprised at how quickly we settled into a routine. soon it was totally normal to be phil's wife. i found i totally loved being his wife! our first two years living in st. louis were an adventure. i think it was just what we needed to learn to love and depend on each other. being way from family and friends we learned to be friends to each other. then we found amazing new friends! God took such good care of us. i learned how to trust and respect phil as my husband. it is hard work, learning to be married, but it's easier if you listen and respect one another.

after two years of living in st. louis, we packed everything in a budget truck and moved all our belongings down to georgia. this time it was still a little scary, but it was so much easier now that we loved and trusted each other as husband and wife. we knew our marriage was solid and could handle the change, and our trust in God had also grown.

we have been living in georgia for a year. it has not been easy. this year has been the hardest financially of any year we've had yet. i felt God calling me to be a stay at home wife. this year has been about learning to trust God when nothing makes sense to us. it has been hard and full of tears and trials. we have learned a lot more about trusting the Lord and relying on Him for everything. while it has been the hardest year in terms of trials, it has been the best year of our marriage. we learned to trust each other so much more with all our thoughts and feelings. we have grown into a marriage. i feel so much more like we are one unit now, instead of two totally different people trying to learn to live together. it took time and trials for us to become one. it doesn't just happen when the preacher makes the announcement, as nice as that would be!

i love phil more than ever, during the biggest trial we have gone through. marriage isn't easy, but it's so fun! and full of adventure, especially when God is the center of it. when He is leading the way it can be scary, but it's the very best ride! every year has brought something new to our little family and i am so excited to see what this year has for us! come on over and follow my blog to see for yourselves what's in store for us this year!!

Change Bucket

We’ve been filling this change bucket since we got married.DSC04878

Phil empties his pockets into the bucket and I empty my wallet.  I just don’t like the extra weight in my purse.  My purse is already heavy enough with me carrying everything but the kitchen sink in there.  I figure I don’t need the extra change-weight.  Besides, do people take change any more?  Everything is at least a dollar and most people don’t even carry cash anymore.  So to me there is no need for me to carry change really.

Now that the bucket is full…

Love Affair with a Skillet

My blog could only be described in 1 word: hodge-podge (are hyphenated words considered 1 or 2 words?). My life is a bit eclectic, so I guess it comes as no surprise that my blog would be as well. I write about anything and everything, including: recipes, DIY projects, travel, our new puppy, and the comings and goings of our daily lives.

In addition to my blog, my life is a hodge-podge; a mixture of two very different cultures. You see, I'm a southern girl who married a yankee (gasp!) But don't worry gals, he's been converted; I got him to move to Houston (hehe). With my hodge-podge life, one night I could be making authentic lasagna and the next I'm fix'n to make some fried chicken. However, no matter what I’m cookin’ up in my kitchen (or what I call “my office”), there is one thing that is constant: my cast iron skillet. I don’t go a day without my trusty side-kick. So today I want to share with you the story of my love affair with my cast iron skillet.

My skillet, who I refer to as Betsy (yep, I’ve named all my trusty kitchen gadgets), did not start out as my best friend. My cookbook club chose the Pioneer Woman’s cookbook  a couple years ago and I knew that I would need a skillet for many of her recipes. Many women get cast iron skillets as wedding gifts, but I was not one of those brides. I didn’t have one, and in fact, all I knew about them was if I washed my mother’s skillet when I was younger she would have “painted my back porch red”. So I was hesitant to get one until I spoke with my hubby’s Aunt Susan. She has been cooking breakfast in her skillet every morning for her cowboy for 40 years! 40 YEARS!  If she has been using her skillet for that long, there must be something amazing about it, right?  So I bought one.  I purchased a Lodge skillet for $20 from Kroger (yep, if I can't get it at Kroger, it doesn't get bought).  Sidebar- I don't think you need to spend an arm and a leg for a skillet; the skillet magic starts when you start cooking, not with the price tag.

The first thing you need to do when you get your skillet is season it (even if the label it comes with says "preseasoned").  Run it under some hot water and let dry completely.  Then apply a thin coat of vegetable oil to the bottom and sides of the skillet (the cooking side only, of course).  Place your skillet upside-down in your preheated 450 degree oven for 30 minutes.   Make sure that you have a cookie sheet covered in aluminum foil under your skillet to catch the drips.  After 30 minutes, let your skillet cool in the oven.  I recommend repeating this process 3-4 times.  If you find a skillet at an antique/thrift shop, and it doesn't have any scratches/nicks, grab it!  Most likely it has already been seasoned to perfection and you can reap the benefits.

I recommend that the first thing you make with your skillet be something a little greasy.  I chose pancakes to make first and this was a BAD idea.  The skillet had not developed enough yet so the pancakes stuck to the pan and I almost burned the place down (OK, that's a huge exaggeration, but there was A LOT of smoke).  I was so upset that my pancakes were ruined, but it was just because I chose the wrong meal to cook first and it wasn't seasoned enough.  Each time you use your skillet it will get easier and easier, because, a) you'll be more familiar with it, and b) it will develop and season.  So if you've tried cooking with your skillet and given' up, pull that bad boy back out and try again.  Don't quit!  If everything keeps sticking, then you need to reseason it.

And get this, I haven't even told you the BEST part of having a skillet yet: you don’t have to clean your skillet. Yes, you read that correctly! In fact, cast iron isn't supposed to be washed.  The clouds just parted and the angels started singing the Hallelujah Chorus! You don’t have to do more dishes!  After I've cooked in my skillet, and it has cooled down, I run it under hot water and scrape off the scraps with Pampered Chef's Nylon Pan Scrapers.  Then I wipe off the excess water with a paper towel and lightly spray it with cooking oil (I use the Kroger brand of Pam).  That's it!

So what do I cook in my skillet? E-V-E-R-Y-T-H-I-N-G!  I can sear any kind of meat, make hamburgers, bacon, brown onions/peppers/garlic, toast tortillas, enchiladas, and the list goes on and on.  Here are some other dishes that I have made with my skillet:

My all-time favorite meal to make in my skillet is Skillet Tamale Pie; you must try it :-)

Skillet Tamale Pie (Hawley Style, adapted from The Best 30-Minute Recipe by Cook’s Illustrated)
Ingredients
2 tbs vegetable oil
1 onion, minced
2 tbs chili powder
Salt and pepper
2 garlic cloves, minced
1 lb ground beef
15 oz. can black beans, rinsed
14.5 oz can diced tomatoes, drained
6.5-8.5oz package of cornbread mix (I used Martha White Sweet Yellow Cornbread)
½ cup cheddar cheese
½ cup habanero cheddar cheese (if you can't find this, just use another half cup of cheddar)
2 tbs cilantro
Garnish with extra cilantro and sour cream

Directions
1. Adjust oven rack to middle position and preheat to 450 degrees.
2. Heat oil in 12-inch cast iron skillet on medium to medium-high until shimmering. Add onion, chili powder, and ½ tsp salt. Cook for about 5 minutes until the onion is softened. Stir in garlic for about 30 sections. Be careful because garlic burns easily.
3. Stir in ground beef, beans, and tomatoes, and bring to a simmer for about 5 minutes.
4. While the beef is cooking, mix together the cornbread mixture according to the package.
5. Stir cheddar and cilantro into beef mixture, and season to your taste with salt and pepper. Pour cornbread mixture over top and spread out to cover the beef mixture in an even layer.
6. Put the skillet into the oven and bake until cornbread is cook through in the center (about 10-15 minutes). Serve with cilantro and sour cream.
7. Eat and LOVE your life

This precious culinary gem is the perfect inexpensive, non-stick, and even-cooking tool to add to your kitchen.  This skillet has "flipped" my cooking world and I hope I have convinced and inspired you to pull out your skillet and get cookin'!  Love y'all!

What I’m Lovin’ Wednesday: Seersucker

I can’t get enough of seersucker and I proudly blame it on my southern roots! 
In 1909 Joseph Haspel made the first seer sucker suit for men in New Orleans.  Haspel’s goal was to make a suit for gentlemen while still beating the summer heat. Today the company continues to thrive in New Orleans, but the style has spread all over the south to help both men and women stay cool.

Marital Monday: Embrace the Journey

Last month I did a series on picnics, but this month we're going in a totally different direction. I have invited some of my *best* blogging buddies to share with you their story of love every Monday in August. What better way to start the week than with a sweet story of love?! Nothing will put a smile on your face like a good love story :-) We can learn so much from the stories and struggles of others, and I hope that you find these stories as special and precious as I do.

This week Danielle from Embrace the Journey is visiting, and sharing her beautiful love story with husband Nick.  Danielle is a wonderful godly woman whose friendship and encouraging spirit I have come to cherish.  I know that you will adore her as much as I do!
Growing up, every little girl dreams of what their husband, aka "prince charming"/"the one", will look like, be like, how he will treat her, how their lives will be together.  However, one of the main questions we ask is, "how will we know when he's the one?"  The answer is, as cliche as it sounds, "you just know."

When I met my husband, Nick over 8 years ago, I just knew.  Some people don't believe in love at first sight, but I will tell you, I do.  I have every reason to.

Nick and I grew up in the same school, but he was three grades ahead of me.  When I finally got to high school, I had my eye on him.  Of course, he was a senior and I was a freshman.  I always joke with him that he was "mean" to me and it made me stop liking him.  I think it was just the whole freshman/senior thing.  Life went on, and I kissed a bunch of frogs.

A few years later, July 2003, two months after I graduated from high school, I was at a festival in our town and I met up with some of my friends, who Nick also happened to also be friends with.  Long story short, we started dating.  Almost four years later, March 24, 2007, we were married and we had no idea what road lay ahead of us.

Nick and I were fortunate enough to build a house on some land that my grandparents had given us.  We moved in a few months after we got married.  Two months after we had moved in, Nick got laid off from his job.  At the time, we were both in school, I was getting my Bachelors in Business and he was getting his Masters in Accounting.  I put school on hold, quit the part time job I had, and got a higher paying full time job while Nick searched for another one.  Luckily, only a few weeks later he was able to find a job.. a much better job.  I continued working the job I had found, still putting school on hold.

About a year later, I decided it was time to get back into school.  My boss at the time, however, decided that it wasn't in his best interest to work with my schedule, being that this job was 45 minutes away, and I would have to leave early to get to my night class, another hour and fifteen minutes away, so I ended up having to quit.  School was just more important and with as supportive as a husband as Nick was, of course he was behind me 100%.  So, I got back into school and found a job that was closer to home.

In the midst of this happening, I had been going back and forth to our family doctor and a local hematologist, with some anemia issues.  They tried all the vitamins they could think of, and tested me for every thing under the sun.  One morning I woke up exhibiting a strange symptom and when telling my doctor about it, he tested me for a few blood disorders, most of them being very rare.  We didn't put much thought into it, because of them being so rare.  About a week later, Halloween 2008, I got my test results.  I HAD one of the rare disorders...one that scared all of us too death.

Paroxysmal nocturnal hemoglobinuria (PNH).... the words just sound scary, don't they?  (Don't go looking it up, since most information you will find is old and somewhat inaccurate.)  We knew that after this diagnosis, I needed to get to a better doctor.  Through word of mouth, we found out about a doctor in Memphis and made an appointment with him immediately.  After seeing the doctor, we were all relieved to find out that I could live a mostly normal life.  I would still be anemic, but I would get a treatment and blood transfusions as needed.  In March 2007, a new drug had been released for treatment of PNH.  It was the first drug of its kind.  Before then, there was no treatment for this disorder, only management.  The treatment would be a 35 minute i.v. infusion, every two weeks.  

I started my treatments, and even knowing I could still live a normal life, it was a very difficult adjustment to make, (some days it still is).  Just when I was getting settled in with my diagnosis and my treatments, the place I was working at, decided to let me go.  I know that I can't prove it, but I'm 99.9% sure that it was because of my illness and having to miss work more than I could even help.  Oh, I left out another important milestone...my college graduation was only two weeks away.

So, having a new, life changing diagnosis, being laid off from my job, and graduation only a couple of weeks away...it seemed as if Nick and I could not catch a break.  Nobody ever thinks that when they start their lives together that it will ever be hard.  Sure, you expect bumps in the road, but never quite so many, and never such difficult ones.  Having said that, I wouldn't change a bit.  I know that probably sounds crazy, but who can say they have been through such difficult times and chose to fight through it, instead of giving up.  Nick never left my side.  He was my rock through these times, even though he did not feel up to it himself.  So, in December 2008, Nick and I graduated on the same night together...what an accomplishment that was.

Everyone knows the economy was on a major downslide after 2008.  Of course, this affected my ability to find a job, even with a Bachelors degree.  So, for a year, I stayed at home.  When I look back, I believe this was God telling me that I needed some time to rest and adjust to my life changes.  Nick never once said anything about my not being able to find a job.  We just made it work, and we did it well.  A year later, I finally found a job, very close to home, and working part time.

Earlier this year, Nick and I decided that it was time to start a family.  I had been told that it would be quite risky for me to get pregnant, so we decided we wanted to pursue surrogacy.  For months we worked with it, but it just never worked out how we expected it to or wanted it to.  The whole time, I was never completely happy with it..my heart always ached for something else.  So, one day, we sat down with my doctor and spoke with him about my trying to get pregnant.  Although risky, he said they would be with me the whole way, if that's what I wanted to do.  I felt a million pounds of wonder and worry lift off of me.  So, we are still waiting for that to happen..... practice makes perfect, right? ;)

Reading all of this, I know I am even astounded that all of this has happened to us just in FOUR years.  I'm sure you are saying the same thing.  I know that it's not for me to judge every situation, but I've seen so many marriages fail and I just wonder, what made it so hard that you couldn't fight for it?  (Infidelity is not necessarily included in that).  So many young couples get married these days and it seems that they think if things just don't work out the way they want them to, divorce is sitting right there for them to access so easily.  When Nick and I said our vows, we made a pledge to not only ourselves, but to God, that we would never give up.  We have certainly tested the "in sickness and in health" vow, but our marriage did not waiver, ever.

I'm here to tell you that no matter what happens, you can work through it, together.  God puts us through these storms only to make us stronger, and show us the rainbow at the end.  Granted, we all have our disagreements, and no marriage is perfect.  

 
Things are going good with my disorder..I take my meds, get blood when I need to, and just take it easy if I feel the need.  Along with other patients, I believe that there will be a cure someday, as they have had so many advancements in medicine, including in the area of our particular drug.  We know that a baby will come along when it's supposed to, and like I said, we will just have fun practicing in the mean time.  I am still working at my part time job, but I am pursuing a career that I can put all of my hard work towards. Nick is still working as an accountant and a blogger/entertainment website columnist on the side.  We have 5 dogs that are our fur babies and we couldn't possibly love them more than we do.  Since building our home, we have added on to it as well (another marriage challenge in itself)!  

We wouldn't change anything about the past few years.  Of course, we would have liked for things to have been easier, but we've been through more than some can say they've been through in a lifetime together.  We will continue to support each other in every possible way--no matter what life throws at us.  I'm not saying our marriage is perfect, but we work to make it as perfect as we can.
