Mason Jar Banana Muffin Pudding

Banana pudding is typically made in a single pan that everyone spoons from.  But doesn’t everyone like their own little serving of banana pudding?!  Uh yeah!  Put it in a mason jar you’re a kitchen celebrity.  Who doesn’t want a tasty treat AND look like the goddess of her kitchen?! Ingredients:
3 cups whole milk (you cannot use a substitute here; I promise, I’ve tried!)
4 large egg yolks
1/4 cup cornstarch
1/2 cup sugar
Pinch of salt
2 tbs unsalted butter
2 tsp vanilla extract
3 large banana-nut muffins, sliced
2 ripe bananas, sliced

Directions:
  1. Simmer the milk over medium heat.  Whisk the eggs, cornstarch, sugar & salt in a separate bowl.
  2. Slowly add the heated milk into the bowl with the egg mixture, stirring constantly.  Then add everything back into your saucepan and heat until thick and bubbling.  Make sure that you continue to stir constantly.
  3. Stir in butter and vanilla until melted. Collage 1
  4. In small mason jars begin your layering, starting with a slice of banana muffin, followed the banana slices and then the custard.  Repeat again, and then top your last layer of custard with crumbled pieces of the banana muffins.
  5. Cover and refrigerate for at least 4 hours before digging in
