What I’m Lovin’ Wednesday: Popsicle Mania

When I was a kid I remember my mom making homemade popsicles.  Lately I have seen them becoming trendy again….so duh…of course I hopped on the bandwagon to try my hand at it!  I wrote about popsicles back in 2011, but I finally got around to making my own for the 4th of July after some inspiration from my fellow east coast Virginia gal Sherri Lynn (She is probably one of the best bakers I know.  While I’ve never actually tasted the goodies from her kitchen, I just know they’re fabulous and I can’t wait until we get to meet some day!  Seriously, go check out Sherri Lynn!).
I wanted to make some popsicles with a red, white and blue theme for the 4th of July.  This was totally simple, didn't require turning the oven on or even measuring!  Completely fun and whatever you want :-)From the Kitchen of Darby HawleyRed white and Blue popsicles

Molds: I purchased my popsicle molds on Amazon.  What I like about them is that they are silicone so it’s really easy to peel the tops off when the popsicles are frozen.  I also love the shape; they’re really fun looking.  I will say that I was a little taken aback with how small they are in person, but I guess that will help me eat less, right? Popsicles: I used what I already had around the kitchen (because I’m lazy like that).  I had frozen strawberries and blueberries which worked great for my red and blue.  (Of course you can use fresh fruit and I’m sure it would be just as good, if not better).  6b7c7030e4e511e2a3eb22000a1fbdaa_7
After thawing the strawberries by running them under hot water, I pureed them in the blender.  edb7a6f6e4e411e2b3af22000a1fb856_72709c17ac62a11e294dc22000ae913c2_7Then I poured the strawberry puree into the molds and dropped in the frozen blueberries (Since I was going to be freezing them again I didn’t see the sense in thawing them out.  Plus the weight of the frozen blueberries helped them to fall into the mold leaving me with a polka dotted look.  Who doesn't love polka dots?!).  I mixed together some 0% fat greek yogurt and light vanilla soy milk.  I would say that I did a little more soy milk than greek yogurt so that it was pourable.
After adding everything to the molds, I put the sticks in and let them sit in the freezer for about 4 hours.  I read some where that the sweeter the popsicle is, the longer it will take to freeze.

These popsicles are so refreshing for this Houston summer heat!
I think I’m going to try peaches next :-)
