Hawley Marinara Sauce

I’ve received several requests to post my marinara recipe, so here it is folks: The Secret Hawley Marinara :-)!  I use this recipe for chicken parmigiana, meatballs, spaghetti, and even eggplant parmigiana. From the Kitchen of Darby Hawley
Ingredients:
3 tbs extra-virgin olive oil
½ medium onion, finely diced
4 garlic cloves, thinly sliced
2- 28oz. peeled whole tomatoes, pureed in a food processor (do not drain)
½ tsp crushed red pepper flakes (I add a little bit more because we like the spice)
Coarse salt and freshly ground pepper
1 tbs dried oregano (this could also be fresh if you have it)


Directions:
1. In a large heavy pot, heat olive oil over medium heat. Cook onion and garlic until soft and translucent (about 4 minutes). Add pureed tomatoes (and the sauce that came in the can with them), red pepper flakes, salt and pepper (to your taste), and oregano.
2. Simmer, covered until thick (about 25 minutes).
*If you’re going to use this recipe with meat add 1 lb ground beef and 1 lb ground turkey and cook until brown with the onions.Marinara
